Thus, it is better to make a “correct” brazier from cast iron or, in extreme cases, steel with a thickness of 4-5 mm (but not less than 2 mm). Its width should correspond to the size of the skewers, and its length should correspond to the optimal number of servings per cooking time (fryer size 350-400 x 600-800 mm).

The depth should vary between 15-20 cm, which will allow the meat to be perfectly cooked. It is better to make a brazier with a grate with a metal adjustable damper, equip the structure with a lid, legs up to 1 m high and a box for collecting ash.

Some of this barbecue is also cut out using a laser or plasma, but this version of the barbecue already requires bending. The grill itself is made of 4 mm thick sheet. Considering that this is a camp grill and its thickness is 4 mm, it will be “infinitely durable”

In fact, you don’t have to bend the sheets if you have a welding machine. The main point where bending is needed is the side walls, they hold the bottom of the grill. It is problematic to bend a four without a machine, although you can cut the bend line with a grinder. Or you can weld rods or other pieces of metal on the side walls.

Tips for choosing the type of grill and its size

To begin with, determine the requirements and wishes:

  • stationary or collapsible type, which one is more convenient to install;
  • how many skewers need to be placed at the same time;
  • at what height is it comfortable to work;
  • whether a grill will be used;
  • what materials for manufacturing are desirable;
  • Is there a need for decorative and additional elements - shelves, a platform for heating a kettle, pan.

Appearance matters too. It should be noted that paint always burns, but forging and bent elements look unchanged even after several years of constant use.

If the grill will be moved around the yard, it makes sense to immediately take a model with wheels. For small structures, handles on the bowl are sufficient.

The side openings in the case do not provide the required air flow. The coals at the edges burn more actively than in the center. Ventilation through the bottom is much more practical. The direction of air movement in this case evenly supports the combustion of the entire mass of fuel.

Materials

Cast iron models are more durable than others, but they can crack due to sudden temperature changes, and they begin to rust due to constant humidity. If you don’t overuse lighter fluid in winter and cover the grill from moisture, it will last almost forever.

Steel is a common material for barbecues, which, depending on the thickness of the rolled material, can become a solid set in a barbecue area in the courtyard or a camping option. For a couple of picnic trips, a lightweight collapsible or folding kebab maker will be enough.

Brick and stone provide ample opportunities for realizing fantasies. All that remains is to choose the fireproof material and the appropriate shape of the grill-stove.

Overall dimensions of the brazier are 1000x358x420 mm, the height of the barbecue including the legs is 1120 mm, the wall thickness is 4 mm. Instead of legs as in the drawing, you can use removable legs made of round pipe. Weld nuts onto the grill and weld studs into the legs. For the legs and handles, a 25x25 mm square pipe is used.

Well-chosen sizes for metal structures

In order for the metal barbecue to turn out correctly, it is necessary to take into account everything from the height of the owner to the number of pieces placed on the skewer.

Width

The width of the grill is determined by the length of the skewers. The full length of a standard skewer is 45 cm, the working area is 30 - 35 cm. Taking into account a small margin, the maximum width of the frying pan is 35 cm. Increasing the size leads to improper heat distribution, heat loss, and uneven cooking of food.

How tall should the grill be?

The height of the barbecue grill is one of the important characteristics. To use the kebab maker comfortably, it should not be too low or high. The full height of the barbecue is determined taking into account the height of the owner and is 0.8 - 1 m. To clarify these dimensions, you need to measure the distance from the ground to the elbow.

Length

The correct length of the barbecue is calculated by the formula: L = N * l , where N is the number of skewers, l is the distance between their axes, equal to 7 - 10 cm.

For example, 6 servings of shashlik being cooked at the same time will take up the length: 6 * (7 - 10) = 42 - 60 cm. If you move the skewers a little closer to the ends, a small device 40 cm long is enough. If you prefer to place the skewers loosely or add 2-3 more – choose a length of 60 cm.

Standard rectangular barbecue grates 30 x 28 cm will also fit into the correct dimensions of an iron barbecue: for 2 grates, a barbecue length of 60 cm or more is suitable. In this case, you can combine one grate and skewers.

Length 60 cm is the most versatile size, allowing you to cook quite a lot of food without wasting coal.

For larger companies, choose a barbecue length of 80 cm.

Devices of longer length are rarely used at home. They find their application in public catering establishments and catering.

Depth

The depth of the grill is determined based on the distance from the product to the coals and the thickness of the fuel layer.

The correct distance from the coals to the meat in the grill is from 12 to 15 cm. The distance has been verified by many years of experience among amateurs, confirmed by professionals, and is also explained by the laws of physics.

Every centimeter is important here - after all, the actual heat is inversely proportional to the square of the distance to the coals. In practice, this means that if you reduce the distance from the skewer to the coals by 2 times from 12 to 6 cm, then the thermal effect will increase 4 times.

If the distance is shorter, the outside of the kebab will fry much more intensely and burn faster. At the same time, it may not be fried inside, especially if the pieces are tight and large enough. Skewers need to be turned frequently. In addition, the fire that appears when coals are ignited from dripping fatty juice can burn the dish, leaving only coals.

Increasing the distance has the following disadvantages:

  • Cooking slows down.
  • The crust forms more slowly or does not form at all. The juice evaporates from the meat, making it dry.
  • Higher coal consumption.

Taking into account the thickness of the coal layer of 5 - 10 cm, the optimal height of the walls of the barbecue is chosen from 15 to 25 cm.


Correct sizes

Thickness

The thickness of the material from which the fryer is made directly affects the service life of the device. Standard products made of sheet steel up to 2 mm thick last up to 3 years. They deform when heated, after which they burn out or rust through.

A good product that will last a long time is made with a thickness of at least 3 mm:

  • walls - 3 - 6 mm,
  • bottom - 3 - 8 mm.

A body made of a thin metal sheet of 2 - 3 mm would not hurt to reinforce it with reinforcement along the long side.

Distance between skewers

The distance between the skewers on the grill is chosen to be at least 8 - 10 cm, so that during cooking you can easily turn them over without touching each other. Laying too tightly slows down cooking and blocks air access to the coals.

What design elements are required?

L.B.: For a barbecue to be considered correct, several nuances must be taken into account.

An ideal fryer should not be hollow, otherwise you can forget about uniform temperature distribution and well-cooked kebab. The best option is a grate , with slots or a grate at the bottom of the roasting pan.

Brazier with grate

The slots or holes will provide:

  • A uniform flow of oxygen into the coal mass, which will support their combustion and create uniform heating over the entire area. Moreover, an excellent result will be obtained regardless of weather conditions (for example, wind), which seriously complicate cooking in barbecues with perforated walls.
  • Removing ash through grate openings. The only thing you need to provide is a box for collecting it.
  • Easy temperature control. A metal flap covering part of the slots or grate will allow you to achieve optimal cooking conditions.

Tools for work

The most common advice to beginners: it’s better to have all the equipment at once than to run a thousand times later! Therefore, carefully ensure that you have all the items in stock:

  • Bulgarian;
  • welding machine;
  • roulette;
  • drill with an attachment for drilling metal.

When you are convinced that everything you need is at hand, we proceed to choosing the main material.

We do it ourselves (no welding!)

Purchased versions of barbecues often last quite a short time, quickly “burn out”, and deteriorate.

There is an exit. It is much more reliable to use a self-made product made of thick and durable metal. To make a small collapsible grill, you will need:

First, one pattern is made, and then all the other parts are drawn out from it.

Dimensions:

  • the width of the leg at the bottom is 5 cm, at the top - 3 cm (sawed at an angle, rounded at the top, because a sharp corner will be dangerous);
  • slot along the leg - 15 cm;
  • total length of the barbecue including legs is 30 cm;
  • the working area (where coal is laid) will be 41 cm wide, 17 cm high;
  • the distance from the groove to the cut (where the side wall insert will be) is 1.5 cm;
  • a piece 2 cm wide is sawn off from below for the bottom.

We cut out the marked template, placing it on a convenient surface and using a grinder.

We'll sand the edges, but there's no need to make any slits yet, because the product will be used under the grille. If needed, it will not be difficult to add them at any time. Another option is to simply make notches for the skewers.

Next, we’ll make a second similar part (marking it according to the first template), and then the side walls. The main long parts differ from the remaining two in the location of the slots: they will be on top so that the grill can be raised.

When all the parts are ready, we begin assembly. Insert the side walls into the slots on the main ones and close the lid on top.

A handle is attached to the top side.

It is very important to make the slot so that it is not close to the middle of the side, otherwise it will be inconvenient to carry and disassemble the grill.

Holes are made according to personal choice. If desired, you can raise the bottom with firewood or something else. In any case, an additional outlet for steam will not hurt.

The cuts for the skewers are made, as usual, not very deep, exactly opposite each other on opposite side walls. It’s better to make them in advance just in case, even if you plan to use a wire rack rather than them.

It is recommended to sand and round the edges for safety and a beautiful appearance.

The width of the side wall will be approximately 31.5 cm, and the height will be equal to the same side of the main part.

The folded bottom part, which needed to be left 2cm if the bottom was removed, looks like this:

As you can see, you can make such a grill yourself quite easily and quickly. However, the maximum sheet metal thickness for it is 3-4 mm. It will be much more difficult to work with material of 5 or more millimeters, because it bends much worse even in a vice, and, moreover, by hand.

Even to bend the bottom of the main parts, you will have to weld them to the rail with the edge that needs to be deformed. Using a hammer, carefully form the bend itself.

There is a minor drawback: after these steps, the metal will look a little beaten. However, this is compensated by the fact that it is located in the inner part of the grill and will not be visible from the outside.

The diameter of the lower holes is 13 mm.

Folding options

The folding barbecue can have separate disassembled parts, or be completely modernized. Such designs are most often used on hikes. If the barbecue body model is not disassembled, its legs may separate. Collapsible barbecues are divided into portable suitcases and three-x versions.

Suitcases, briefcases, diplomats, cases, books

A camp grill in a suitcase is convenient to use due to its compact size and the ability to store all the parts together. Videos and photos of such products allow you to appreciate their merits. The only drawback of these products is the presence of mobile elements that gradually wear out.

Three X model

The ready-made folding grill three x got its name due to the supports shaped like the letter X. The main advantage of this design is its ease of use. All you need to do is open the grill to start using it. Such a camp stove has quite large dimensions and will not be easy to transport for everyone, but it can last a long time due to the minimum number of connecting elements.

Brick structures

Unlike metal, brick heats up much more. By the way, this is why the meat turns out juicier and cooks faster. The width and height remain the same - they are selected to your own taste. You can even make a full-fledged barbecue with a hood and an additional countertop.

But the depth of the brazier is determined by the size of the brick, but the masonry should be no more than 20 centimeters. As was said, brick retains heat better, so this height is acceptable with a coal fill of 5 centimeters.

By the way, only fireclay brick is used for masonry; it is also called heat-resistant. It does not crack when cooling.

Characteristics of heat-resistant steel

In this block we suggest that you familiarize yourself with the characteristics of heat-resistant steel. It is from this that we propose to make a grill (third master class), because... structural integrity and resistance to deformation over time is the main task. The second point is to ensure that the steel rusts for as long as possible.

As suitable metals, we suggest considering the characteristics of 2 grades of heat-resistant steel: 09g2s, 15khsnd (nl-2). In addition to their heat-resistant qualities, they have a number of advantages:

  • take a long time to rust;
  • In stores you can buy thicknesses of 2mm, 3mm, 4mm, 6mm. In general, this thickness is enough to implement the project (15HSND (NL-2) only 6 mm or more). A metal thickness of 6mm is suitable if you want to make a solid stationary grill (it is heavy);
  • Excellent for cutting and cooking.

09G2S - interpretation and properties of steel

09GS2 is a low-alloy structural steel with an increased endurance limit. This brand is widely used for welding steel structures, including suitable for barbecues. Use this grade of steel if you want to make a portable one.


09G2S

On sale you can find sheets with a thickness of 2 mm, which is ideal for portable grills and barbecues. However, nothing prevents you from making a stationary barbecue from steel grade 09G2S. For a more detailed understanding of the heating properties, we suggest studying the table below.

15HSND (NL-2) - interpretation and properties of steel

Steel 15HSND (nl-2) has excellent physical properties when exposed to high temperatures and is resistant to overheating. This quality allows it to be used when cooking thick-walled structures, including barbecues.

This steel is more suitable for stationary structures than for portable ones, due to its thickness - at least 6 mm. How 15HSND (NL-2) behaves at elevated temperatures can be seen in the table

The right grill size for different grilling methods

Don’t forget that the right barbecue grill is determined by the method of frying. Often the meat is cooked on skewers, but some prefer barbecue. Naturally, they require different temperatures, amounts of oxygen and equipment.

Above we have already discussed the dimensions of an ideal barbecue for 10 skewers. The same dimensions can be transferred to another number of servings. But with the grille the situation is a little different. If you buy it separately, they have special protrusions that fit standard barbecue sizes.

But it can also be stationary. Then the length and width are selected to suit it.

Use and care

After assembly, the grill should not be used yet, especially in situations where the metal used was not new.

First of all, it is immediately cleaned of dirt and rust that has formed on the material during operation or storage. A grinding machine or an ordinary drill with a specialized attachment is perfect for this.

If you decide to paint the grill, it is best to use heat-resistant acrylic paint.

If you don’t want to do this, but want the grill to shine, it needs to be blued. And first of all, to do this, degrease the surface by wiping it thoroughly with an alcohol solution.

Next, all the parts of the grill are placed in a solution of caustic soda and kept in it for about an hour and a half. This way you will not only make the grill beautiful, but also protect it with heat-resistant film, and also protect it from rust in the future.

In addition to the usual calculations for making a barbecue, you can use the additional tips given below to design a real recreation area in your country house or home area.

  • If the length of the barbecue is planned to be more than 100 cm, then in this case it is recommended to equip the structure with additional legs. This will give greater stability.
  • The metal grill can also be equipped with wheels. This will allow you to easily change its location on the site if necessary.
  • A canopy can be constructed over barbecues and fireplaces. In this case, you can cook barbecue even in bad weather.   • It is better to cover a metal barbecue made by yourself with fire-resistant paint. This will make its appearance more aesthetic and significantly extend its service life.
  • It is better to make slits for skewers on a roasting pan at a distance of 5 to 8 cm. This distance will allow you to easily turn each of them over without touching the neighboring ones.
  • Before using the barbecue for the first time, it must be calcined, that is, light a fire in it, in order to get rid of all the harmful substances accumulated during construction.
  • Near the hearth you can equip a small reservoir, pond or alpine slide. This will allow you to create a complete ensemble of a suburban recreation area.

It should be noted that the correct grill should always be made according to generally accepted standards, which must be slightly adjusted to individual requirements.

In this case, the meat will be cooked immediately in sufficient quantity, will not burn or dry out regardless of the cooking tool, the fuel material will be used efficiently and economically, and the heat will not escape into the air.

In addition, there is currently a wide selection of building materials that will be suitable for its manufacture, be it metal, steel, cast iron, heat-resistant brick or natural stone.

When decorating a barbecue, you can implement any ideas and projects, be it a small mobile fireplace, a stationary brazier or even a brick oven in your garden. Subject to compliance with building standards and fire safety, the result will only please the eye.

How to paint a metal grill

If you're really bothered by rust on metal, you'll have to clean it off by hand. It is advisable not to use any chemicals, work only with brushes and sandpapers. If desired, it can be painted. But paints must be heat-resistant, or even better, heat-resistant, because only they can withstand the burning temperature of wood. There are several options:

  • heat-resistant paint CERTA (Certa) can withstand up to +900°C, there is another name for the same paint OS-82-03T;
  • heat-resistant enamel Rust-oleum, can be used up to +1093°C, matte, available in white, gray, black;
  • heat-resistant enamel (paint) “KO-8101” can withstand heating up to +650°C, there are twelve basic colors;
  • Heat-resistant enamel KO-8111 Thermal also has anti-corrosion properties and can withstand heating up to +600°C.
